Ensaladang Alugbati (Malabar Spinach Salad)


This post appeared in my Facebook memories today. I'm glad it did! I featured this salad in my FB page a year ago. Alugbati (Malabar Spinach) Salad (Ensaladang Alugbati). This came up when I received for the first time this bouquet of alugbati from Erik, my officemate. He shares with us fruits and veggies fresh from his garden. 




How do you like this beautiful bunch of alugbati (malabar spinach) topsWell, this is what I did. 

Ingredients:

A bunch of alugbati tops
Pinch of iodized salt
3 tomatoes, sliced
1 large onion, sliced
Pinch of ground pepper
2 tbsps apple cider vinegar
1 tsp honey
1 tsp olive oil

Here's how:
1. Blanch alugbati tops in salted boiling water. Drain. 
2. Mix with tomato and onion slices. 
3. Make dressing (pinch of salt and pepper, apple cider vinegar, honey and olive oil) according to your            taste. 
4. Add dressing to alugbati tops. 

I like my salad with plenty of tomatoes and pepper. Perfect with fried fish. Hmmm... the crunchy succulence I love!


Guess what I did. I asked my FB friends for alugbati dishes suggestions. They came up with these ideas:
1. Ginataang monggo with squash and alugbati
2. Sauteed ground beef with alugbati
3. Sauteed shrimps with alugbati
4. Sardines with alugbati
5. Sauteed alugbati with oyster sauce
6. Sauteed alugbati with shredded dried fish or anchovies
7. Veggie stew (Laswa) with alugbati

I certainly didn't have enough alugbati for all of these dishes. I had to wait for Erik to bring more. 
Meantime, hubby and I enjoyed our meal.

Ensaladang Mustasa

It's back to work today, after five days of rest, something I've been looking forward to. As if the  long Christmas holiday vacation was not enough :) Well, days just seem to fly so fast! Thanks to the additional non-working holidays brought about by the Pope's visit to my country, the Philippines.
