I couldn’t recall when I first had my first taste of Bulgarian sausage. What I do remember is that I fell in love with it at first bite. Since then, my freezer never ran out of stock.
I’m fortunate to have been introduced by my officemate to Plamen Yordanov, a chef from Bulgaria who married a Filipina. Plamen gave us free taste of some of his dishes. He makes sausages. Hubby and daughter would always say, “Hmmm... what’s that smell?” everytime Bulgarian sausage is on the pan. Its aroma they may not very much like but the taste, I believe, they have unknowingly learned to love because I couldn’t save some left-overs to bring for lunch the following day.
For this post, I’m featuring one simple and easy-to-cook Bulgarian sausage dish I often make at home— Sauteed Bulgarian Sausage with Sigarillas (Winged Beans) and Tokwa.
Here’s how I made it.
Prepare the following:
1 pc 3 to 5-inch square tokwa, cut into chunks
Oil
1 pc 3-inch long Bulgarian sausage, crushed (1 to 2 pieces if shorter)
5 cloves garlic, minced
1 medium onion, sliced
1 bunch sigarillas (winged beans), cut into chunks
Salt and pepper to taste
Directions:
1. Fry tokwa until golden brown. Drain on paper towel. Set aside.
2. In the same oil, sautee onion, garlic and sausage.
3. Add sigarillas, salt and pepper.
4. Simmer until sigarillas are tender.
5. Remove from heat.
6. Top with fried tokwa.
See, it's as easy as 1-2-3 đ Hmmm... I so love the crunch of the sigarillas and with the aromatic flavor of the Bulgarian Sausage you won't crave for any condiment anymore.
