Chili Garlic Chicken



Are you fond of garlic-flavored meals? Chili-flavored? How about chicken?


If you like all of the above, this easy-to-cook recipe is for you! Interested? 

Here’s how I made it.

Ingredients:
Oil
3 cloves garlic, minced
1 medium onion, sliced
250 kgs. chicken, chunked
Tomato sauce, 250 gm - sachet (any variant - original, sweet-style, etc.)
1 pc carrot sliced lengthwise
1/2 cup button mushrooms, sliced
1 green bell pepper, sliced 
Salt, pepper and sugar to taste
Chili-garlic paste, according to desired spicy flavor

Steps:

  1. Sauté garlic and onion in oil. 
  2. Add chicken.
  3. Add tomato sauce. 
  4. Simmer until chicken is tender. 
  5. Add carrots. Simmer. 
  6. Add mushrooms, bell pepper, salt, pepper, sugar and chili-garlic paste.
  7. Simmer until all veggies are cooked. 
  8. Serve as toppings on hot steamed rice. 
I added a pinch of brown sugar for an added sweetness. For this dish I used Del Monte Filipino Style Tomato Sauce. 

Sometimes I use Sweet Style Spaghetti Sauce or banana ketchup so there’s no need to add sugar. 


You may also substitute fish for chicken. 

Thanks to my daughter, Ana Cristina, for the chili-garlic paste. The 1-inch tall chili-garlic bottle she gave me has already gone a long way. In the absence of chili-garlic paste, you may improvise by sauteeing more garlic and adding chili flakes or green pepper for the spicy flavor.

Ensaladang Mustasa

It's back to work today, after five days of rest, something I've been looking forward to. As if the  long Christmas holiday vacation was not enough :) Well, days just seem to fly so fast!
