Inspired by the Tropical Spinach Salad posted by Lemon Tree Dwelling, I made this salad for dinner tonight. Guacamole-Spinach Salad Ingredients: Salad: 1 avocado, diced 1 slice pineapple, cut into chunks 1 piece pear, diced 1 bunch of spinach 1/2 small red onion, thinly diced 1/4 cup grated parmesan cheese Dressing: juice of 1/2 lemon 1 tsp olive oil 2 tbsps vinegar Steps: 1. Mix all ingredients for the salad. 2. Mix all ingredients for the dressing. 3. Pour dressing over the salad. Serve and enjoy.
