Sardines-Veggie Patties (Tortang Sardines with Veggies)

That’s hubby’s post in Facebook today (March 15, 2021). Yes, it’s been a year since Metro Manila was placed on lockdown. We started working from home, and as health care workers, we physically reported to office two or three times a week. 

For me, the Work-from-Home scheme was more stressful than reporting physically to work. One gets to deal with office concerns by chatting with officemates non-stop while attending to household matters, such as preparing meals on time. So this pandemic has taught me to make simple, fast and easy-to-cook meals.

For this post, I’m featuring a dish that has become popular during this pandemic. This was inspired by the various Tortang Sardines meal ideas posted by friends after receiving their share of goods (ayudađŸ€Ș) from the barangay or local government units. 

Tortang Sardines with veggies for the twist. 

Here’s how:

Ingredients:
1 can sardines in olive oil
2 tbsps flour
1 medium onion, sliced
2 medium tomatoes,sliced
1 medium eggplant, chunked
1 small carrot, sliced into strips
5 pcs shitake mushroom, sliced
Salt and pepper to taste
Curry powder (optional)
2 eggs, beaten 

Steps:
  1. Remove oil from sardines. 
  2. Mix sardines with flour. Set aside.
  3. Use the oil from sardines to sautee onions, tomatoes, eggplant chunks, carrots and shitake mushroom. 
  4. Add salt, pepper and curry powder. 
  5. Add sauteed veggies to sardines-flour mixture.
  6. Add beaten eggs. Mix together. 
  7. Form patties and fry in oil using the same pan until golden brown on both sides. 






Serve each patty as toppings on rice with your favorite ketchup or with wheat bread and lettuce or romaine.
